An apostrophe is often represented in an XML document as ' When the XML parser hands it to an application, it will normally decode it and give the application a regular apostrophe ('). If you're seeing ' (six characters) this might be because the XML representation has been read without decoding, or it might have been double-escaped (as &apos;) in the XML file.
