There's nothing to change - XHTML transitional is an updated version
of HTML4 but with XML style ending tags and properly quoted attributes
instead of the tag soup most people create as HTML4.

As far as I remember most email clients will have no issues with
reading well formed XHTML compared to tag soup HTML4, since it's much
easier to parse than HTML4. So the question becomes rather - what
specific issue have you encountered when sending well formed XHTML ?
